So like all med students, I did some volunteer stuff ungrad. Albeit nothing spectacular, but I put my time. So how much of that volunteering would you guys recomend to document on ERAS?

I listed the significant things...ie volunteer organizations that I was president of, etc, even though this was 7 - 8 years ago (I took time off between undergrad and med school). If it's something you did for at least a year, I'd put it in.
