Like what you are responsible and not responsible for, or is it something like, "You must know each book, back and forth, for each subject (physics,chem,bio,etc.)."

I know there should be something out there that cuts down irrelevant material for the MCAT, no?

Yes, it is on the AAMC website under the MCAT section.
