I have heard that all UF ophtho residents who wanted to do a fellowship for the last few years have been able to do one. Does anyone know additional details, like what the fellowships have been in and where they were for the last several years?

I met a U of F grad doing a retina fellowship at NYEEI. U of F also has fellowships; retina and cornea. I doubt residents who perform well there have any trouble getting a fellowship.

For a more definitive answer, contact the program coordinator/director. They should have no problem disclosing info about their recent placements.
