On the real DAT, do you guys know how important those parts are?
I am taking the DAT next monday...and I am really shaky on those sections.. should I spend more time on those sections?

If you have the KAPLAN book just read quickly over these two chapters. There's a greater chance that you see something related to Amino Acids rather than questions about carbohydrates.
You should probably know stuff like primary, secondary, tertiary, and quaternary structure of amino acids.
For carbohydrates, you should probably know the names of few important monosaccharides, disaccharides, and polysaccharides. Also, learn some info about how structural polymers of polysaccharides are different from energy-storing polymers (Cellulose vs. Starch for example).
You probably won't see many questions on these (if any), but try to have some basic knowledge of them.

Relax! I completely ignored the entire "Experiments" section of O-chem and still ended up with a 23. If you have the most important topics down, you shouldn't worry about minor stuff like these.
