Basically, I have 120 credits from my undergrad at Rutgers with a 2.5 GPA w/Economics and Chinese major.

Fast forward 4 years later, I'm about finished with my science prerequisites for med school, about 30 some credits with straight A's, a few A+s, with a 4.0.

Unfortunetly, my GPA will still be under 3.0...

Haven't taken the MCAT but I'm confident I will get better than average. I have ECS shadowing in radiology which is what I'm mostly interested in.

What else can I do to improve my chances to get into a decent program?

Continue your GPA repair. That GPA needs to get above 3.0, and even with that you are going to need an extremely good MCAT score (33+ but more like 35+) so start studying. What other ECs do you have? Any volunteering experiences? You definitely need more than radiology shadowing as medical schools won't consider that to be substantive clinical exposure. Good luck.

Will starting clinical shadowing and volunteering, just haven't done so because of school and working 40+ hours a week.

I have about 3-4 Fs that I wish I could somehow eradicate, GPA killers.

I received an F in Intro to Psychology during my heydays at Rutgers but got an A in Intro to Psych at USF. My academic counselor says those Fs are not replaceable at another college, is that true?

In the AMCAS system all grades are considered, so medical schools will see both the F and the A in the intro to psychology classes.

If you haven't done so, I recommend calculating your AMCAS cum GPA and science GPA. This can be done using the website below.

Another option to consider is the DO route. AACOMAS (DO version of AMCAS) replaces grades rather than counting both of them, which would be beneficial for your current situation.
