I can't speak to Columbia specifically with regards to difficulty of curriculum, but I would think that the biggest stumbling block for new students would be handling the math involved with the biostatistics courses, since you've already done a math minor, you're probably looking pretty good there. What might be unfamiliar to you specifically could be the biological side of various diseases, I'd suggest reading a bit about a specific disease, if you have time, such as malaria or HIV, from an epidemiological and biological standpoint.
