would a recommendation letter from a human sexuality PhD (she is part of the women's studies department but a lecturer) be counted as non science?

could human sexuality be viewed as a science course? (it involved a ton of science) but it was a general education requirement at the school.

What constitutes a science has less to do with the material covered and everything to do with how your school designates it. In general a womens studies course is not a science.
 
Call the schools that want to know and ask them. I've gotten wildly different answers.
