I got accepted to NYCPM but am on the waiting list for DMU and they say spots won't likely open up until June/July. I remember being informed that I need to turn in my financial aid information to find out about scholarships and it's better to do this earlier. My question is what do I do if I fill out my FAFSA for NYCPM then get in to DMU in July. Is it difficult to change things that late in the process (i.e. cancelling FAFSA info I've already turned in and applying for DMU finaid)?

You can list more than one school on your FAFSA. Just add both. FAFSA is a government program, it is not school-specific.
