Is it possible to do a residency in California if you have a wife and kid? These places pay 46-56k/year and I just don't think I can afford to live on that salary with a much higher cost of living. How much does moonlighting help?

Plenty of people live in Cali on that salary. Make a budget and stick to it.

Is your wife going to work?

You can afford to live. You just can't afford to live well.

Started residency with a wife that doesn't work and 2 kids, ending with 3 kids. FM in Downey...totally doable. I had some side gigs though (manage an airbnb) and this last year I have been moonlighting. We lived on $40k in CA med school so it was a big step up for us.
