How to describe Peace Corps on my work/activities?

For the past two years I've been living in Mongolia working in a rural hospital as a Peace Corps "Health Extension Volunteer" (Translation: public health specialist) and am now returning and applying for this next cycle but I'm somewhat mystified as to how to describe my Peace Corps activities on the work/activities section.

I'm not sure if it should be under Community/Service or Paid Employment as it is definitely a 50+ hr/week job and we do get paid a small amount, I make about $120 a month plus $300 for every month I'm here to be paid upon my arrival back in the U.S. Also if it should be Medical/Clinical or Not Medical/Clinical since a lot of my work was outside the hospital doing English teaching/community health initiatives/translations.

Also should I try and split up some of my major and minor projects into their own categories to fill up all 15 of my slots? Right now I've split it up into Peace Corps Mongolia Public Health Specialist, Founding a my towns first Disabilities Center, and a technical trainer for the new incoming volunteers. Should I split out my English teaching and other minor projects like putting together a nursing seminar for my hospital into their own categories or just leave them under the catch all of Peace Corps Mongolia Public Health Specialist?

On a final note, a good portion of my personal statement is about my time and work here, and the disabilities center, but I don't want to just reiterate what I said there on my most meaningful experiences however those two things are far and away the most impactful things I've done so should I try and pick something else as my most meaningful or would it be alright to just talk about some of the other things I did in those experiences that weren't covered in my personal statement?

Not sure about whether to call it volunteering or paid employment, but I do think it would make sense to break it up into clinical and non-clinical. However, I wouldn't break it up further than that, or it will look like you're really stretching the experience unnecessarily. Do you have other activities from before you joined the peace corps to include?

A lot of people end up talking about their most meaningful experiences in their personal statement as well. As long as you describe it differently (ex. sharing a couple important moments in your PS, and describing the overall experience/impact in your activities section), you should be fine.
