With the amount of time you have, I would do some high yield studying. For the mechanisms, focus on understanding basic patterns of reactivity. For example, by knowing how carbonyls undergo nucleophilic attack, you understand all sorts of mechanisms such as transesterification, hydration, acetal formation etc. Group every mechanism from the content outline into some sort of broad category and practice thinking critically with practice problems. In terms of lab techniques, IR spec, NMR etc, there are a limited number of things that show up on the MCAT such as the fact that most IR spec questions involve alcohols or carbonyls. These topics are covered pretty well in most prep books.
