Definitely a realistic goal to score 516-520, the Kaplan exams are so deflated it's ridiculous. 506 and 507 are really good practice scores for Kaplan. Keep working hard!
EDIT: If you really want to accurately gauge where you're at, AAMC recently released a new practice FL that's scored. Definitely make sure to use that in your prep, and use it wisely.
