Texas Tech Paul L. Foster School of Medicine in El Paso. Conversational Spanish is taught during a 3 week immersion program at the beginning of first year and then one hour of required medical Spanish every week for the first two years.

A zillion different medical schools offer it as an elective. I'd imagine it varies somewhat by region; the schools I interviewed at in NY/CT all offered it.

Some undergraduate programs also offer Medical Spanish as well. You could always check your catalog at your university.
