Looking to do some Undergraduate Research with the biomechanics of Orthotics, was wondering if anyone could suggest some good articles to read up on for a starting place. Thanks in advance for your time.

This is a great question!

There will be a lot of different literature you can sift through but the best information on orthotics and foot and ankle biomechanics will probably be found in The Journal of New England Medicine. You will probably have to get access through your Undergrad library but it will contain the most worthwhile and best presented information. Why? It has the highest impact factor (http://en.wikipedia.org/wiki/Impact_factor) of any of the medical specific journals. Search through articles from there and see what you can find.

There are also a lot of articles in JAPMA (http://www.japmaonline.org/). These will be simple articles that are not cited very much.

You will find zero articles about foot and ankle biomechanics and orthotics in the NEJM. Look at foot and ankle specific journals such as Foot and Ankle International (FAI), Journal of Foot and Ankle Surgery (JFAS), Foot and Ankle Specialist (FAS), Clinics in Podiatric Medicine and Surgery (Clinics), Foot and Ankle Clinics (FAC), and also the foot/ankle sections of Journal of Bone and Joint Surgery (JBJS)/American Journal of Sports Medicine (AJSM). There are also some classic textbooks out there such as Normal and Abnormal Function of the Foot by Root and Weed, among others.
