Should I list work experiences that are unofficial?

I worked at my uncle's small business every summer, and he would just give me cash at the end of every week. It would not show up in a background check; should I still list it? It wasn't medical or anything.

On an unrelated note, is it okay to say people's names in my PS? For example, "Jim, who was a veteran..."

Background checks for medical school are criminal background checks, not the sort of "interview your neighbors" check the FBI runs on staff members for the Senate foreign relations committee.

No one blinks when they see employment in a family business and no one really cares if you were paid off the books or if you were paid at all. (Some kids are expected to help out in the family business from a young age even if it is just restocking shelves or putting condiments and menus in the takeout bags.)
