Can anyone further explain why the organic liquid should have a boiling point over 100 C and relevance of water boiling at 100 C?

My guess: organic liquid most likely to have higher MW than water therefore they'll have higher b.p. Or you can look at this way: more solute in organic liquid = higher b.p

Let me know If i'm wrong

is it a solution containing an organic liquid or a pure sample of the organic liquid?
Labrat07 is right that organic liquids containing H, C and O or another heteroatom will have higher bps than water, but a lot of the shorter chain alkanes have a bp lower than 100 degrees.
