why hasn't an ultrashort acting paralytic been discovered yet?

Other than the introduction of IV oxygen, do you think an ultrashort acting paralytic would be a game changer in anesthesia? how would it be used?

Would Joan River's be alive if it existed? A drug that was so short acting that non-anesthesia personnel were comfortable with its use?

In the non-depolarizer classs, there was. It was called rapacuronium. It was pulled off the market secondary to adverse (bronchospasm/anaphylactoid) reactions.

Then again, we already do have succinylcholine...

No it would not have save her and putting a paralytic, however short acting, in untrained hand is a recipe for disaster.
