When schools say they require two years of work experience before applying, would applying after one year of working count? Assuming you continue working during the year you apply?

I'm one year out of undergrad and am considering applying to MPH programs this fall.

Probably, since you would still be working during the application cycle. That constitutes two years.
 
Work experience requirements are never hard rules that automatically discount you from admission. But that does suggest they're looking for well rounded applicants.
