What specific bond is involved in acid base reactions. For example, when NH4+; or H3O+; H2O; H2CO3+; or any other acid. The bond that is responsible for bonding the acidic hydrogen. Dative bond?

Yes. The electrons bond to the hydrogen nucleus. So it would be a co-ordinate bond.
