I just dropped by a local food bank and asked to volunteer. The coordinator seemed irked and defensive when I asked her if they record hours. She said that she would sign off on ten hours but no more. She said she didn't want to find out later that I was doing court ordered community service.

I indicated that I was applying to med school next year and that I wanted to do something I believed in that could show I care about my community. She still would not record hours.

Can I just volunteer there anyway and keep track of the hours myself? Or is there some kind of proof I need to show that I have a paper record of volunteering there? I am sure ADCOMS are worried about overestimation of EC's.

You don't need to show proof. You'll list and give a brief description of the experience on AMCAS and enter the total # of hours. Pretty much based on the honor code.
