I need 1 more science class on my schedule, but have some leeway what to do.
I want to take the one that will be the most recommended to help medical students in medical school.

Genetics (hardest of the three in terms of grading, but material is fair)
Systems Physiology (hard, but slightly curved)
Parasitology (easiest of the three in terms of grading, but all memorization)

Which one will be the most useful in medical school? Which one would you recommend I take? I don't care too much about the grade I will get because it won't significantly affect my GPA...I just want to the the one that would provide me with a solid background for medical school. If they're all equally helpful, then I'll take the easy one, but if one is more helpful than the others, which is it?

physiology without a doubt! also, if you haven't taken the MCAT already, it should also help with the biology section.
