I'd imagine any school in an area full of beef cattle would do a good job preparing you for that type of medicine. Texas, Oklahoma, Kansas, etc.

And Colorado State University. They have a beef (Angus and Hereford) herd at ARDEC and the godfather of repro owns a herd connected to it just north of town. Lots of beef cattle management courses. Dairy courses are tougher to come by until you are in vet school.

Although Iowa is known primarily for swine, a quick glance at our course catalog tells me that there's lots of various electives for those interested in beef. Beef records analysis, beef cattle calving, beef herd management, feedlot production med, and advanced ruminant nutrition, among quite a few others.

Ditto the KSU, OkSU, TAMU, CSU. Maybe Iowa too? But honestly, if you go wherever is the cheapest/easiest for you, you'll get good production animal medicine. It's part of the curriculum anywhere, and there are more opportunities if you seek them out. There's not as much interest/competition either (compared to zoo medicine, small animal specialties, etc.) so you will probably get some more personalized attention (IMO).
