Your MCAT scores are fine. Your GPA is fine. Your EC's are fine, just keep building them up and look to do some volunteering work with the less fortunate, lower SES people, those of different background from yours and that like. You seem like a very solid candidate for pretty much every Texas school except for perhaps Baylor and San Antonio.

Just out of curiosity, why did you state San Antonio and not UTSW?

Aim for that classic mid-low tier list. Don't get over confident with your choices and you should have a very successful cycle.
