What if I need to enroll in a JC to finish up some classes in the fall. Do I include the school in the AMCAs? Or do I just send in the transcript as an update?

Are the classes you need to finish pre-reqs? Then definitely yes. If not, I'd still lean toward putting them into your AMCAS, ESPECIALLY if you have graduated - it shows the adcom what you'll be doing with your life in the next year.

Definitely, because you need it to complete your degree, which currently would show as incomplete.
