After the interview how long is it before that the school informs
the candidate if he/she is accepted or wait listed or rejected?

How long they give the candiate to accept?

If the admissions are rolling, why NYU admitted more students than they have seats?

Rolling admissions only means that seats are set aside for students who are given an acceptance. Nothing says that students have to, or will, choose to matriculate!
