If you quit and give proper notice and leave on good terms there's no reason not to list the experience. Your reason for leaving is good enough, to focus on school. You're not going to need letters of recommendation from previous employers, it's not relevant.

You need professor letters not employer letters. Excluding required information is the same as providing false information, so don't risk it. They won't contact your employer unless there is a red flag somehow in your application and even then it's unlikely. Just leave on good terms and avoid getting fired for something stupid!!!!! If it's bad and you can afford to then leave sooner than later before you get written up or fired. Leaving to pursue school is acceptable for a reason as you need shadowing experience and volunteer time.
