I am currently a senior at college, and I am planning to take 2 years off.
Will I be a non-traditional applicant?

Meh, not really. I would associate non-trad with someone who had many years doing some other career after college and then deciding to pursue medicine.

If you went to college with the intention of becoming a doctor and take time off to do some resume building activity like Peace Corps or research or TFA, you're still a traditional applicant who delayed the process. Not that it matters, there's not a "non-trad" box on the AMCAS.
