I represent a CSU - I graduated from Chico State in 2001 and am applying along with a lot of other people on this board to begin school this fall. As long as you do well, there shouldn't be a huge bias against you even though you're coming out of a less recognized school. I applied to 10 schools and received interviews from all 10, interviewed at 5, have been accepted at 3 (Stanford, UCLA, WashU) and am still waiting from 2 (Harvard, UCSF).
One of my interviewers at UCLA told me that he considered my 3.96 gpa from Chico equivalent to about a 3.75 from a more prestigious school, but that in itself did not keep me out since he called me about two weeks later to inform me of an MSTP acceptance. No other school questioned why I attended a CSU during the interview. If the goal is to attend a top school, then it may be more important for students graduating from a CSU to have an MCAT score at least on par with the medical school's average to show that they have a similar aptitude as someone graduating from a powerhouse school.
