Does it matter what subject I research?
Would they prefer Biology to say Psychology? Physics? Chemistry?

Research at the Biology department here is extremely competitive and they're already booked for next year.

Anything you want is good. The chance that you'r actually going to apply any of the knowledge you learn or develop in your research is minimal, it's more learning about the process of research that schools are interested in.

I remember well both minutes of dental school my extensive knowledge of leukotriene metabolism was useful or relavent. ;)
