Each one is individualized, and I send snail mail notes, not emails, but here's the basic idea:

-Thank him for taking the time to interview me.
-Explain why in particular I enjoyed talking with him: mention one or two things about the interview I especially enjoyed or appreciated, such as an anecdote he told, a particular quality he had, etc.
-Point out that my visit allowed me to get a good feel for the school and reinforced my believe that I would be an excellent fit there (if this is true)
