..I'm shadowing 2 more doctors this summer, I would like to get some LOR's. How does this work? Do I ask them if at some point in the future can they write me an LOR when I need it? Do I ask them to write me one right now and just hold onto it? What's the protocol for a situation such as this??

Interfolio. They will store the letters for you for a small fee. Once you're ready to apply you can have the letters sent directly to AMCAS.

I do not have an interfolio yet and I'm in the awkward period where I need a little bit more than a year with the account and if i wanted those extra 2 months I need to pay the 3 year account fee :/

You could ask them to write one right after you're done w/ your shadowing but tell them to hold on to it in a computer file.

Then just keep in touch with them 3-4 times a year. This helps to build relationship with them. About a month before your apps, ask them if they have a little bit of time to revise it.
