It is too late to apply to MD schools for this current cycle. You could apply next June if you accumulate 50 hours of physician shadowing (including primary care) and 200+ hours of clinical volunteering with patient contact. Where you apply will depend on your MCAT score.
 
There are more reasons you’ve listed in your post for taking a gap year than for applying next cycle. Slow down , do what you have to and when you apply do it once with the best application possible.
1). I’m not entirely sure that EMT training counts as clinical experience. And you really need 200+ hours of clinical experiences. Paid or volunteer. If you take a gap year hopefully you’ll be able to acquire lots of clinical experiences in senior year.
2).You don’t have the required letters. Does your school offer a committee letter? If so try to get that. Med Schools expect a committee letter if your school has that option. If they don’t, take biochem in the Spring and just shine. Go to office hours etc. Be an active participant. Don’t take the MCAT without taking Biochem.
3). Just because we don’t know how this cycle or even the next couple of cycles will play out, you can be assured that other applicants will have all of the required expectations met. ADCOMS won’t allow much leeway because they don’t have to. Schools have thousands of qualified applicants.

I think your chances will be a lot better if you take that gap year and get more clinical exposure. The exception might be if you are certain you want to go to your state school; you could give that a shot, and apply more broadly in the next cycle if you didn't get accepted.
