This may be a stupid question. I have the 2001 version of the Kaplan Lecture Notes. I was under the impression that they were the actual review books for the class, but in the preface, the authors state that they are in fact not review books and shouldn't be used without the use of their lecture videos. Are there actually a separate set of Kaplan review books? If not, would anyone recommend just studying from the Kaplan Lecture Notes for Step 1 (they are still 2000+ pages) without access to their online videos? Thanks.

You've got the Kaplan material, there are no separate review books, just what you have now. Its just that many people do not use the lectures, just the books by themselves so you might get the impression that the kaplan review books and lectures notes are different. They not. Your good to go.
