So, I wrote a letter of intent to WVU before I had been accepted to any schools, but now I've been accepted to MCV/VCU and would like to arrange housing and such. Is there a point at which it is only fair for me to be able to back out of my commitment?

I think so. If you still want to go there more than WVU, you might consider sending them a letter saying that if they don't accept you my next monday, you would like to withdraw so that you can get settled before med school. You'd have to phrase that a lot better, but it could get you in.
