I've waited a while to post this I know I'm late, but my application is now complete with letters etc.
A little background I have an Electrical Engineering degree and a year of post bac for premed. I'm working as an engineer now. I have 100 hrs at a hospital and 100 hrs shadowing, 300 hours as a tutor STEM, some work experience and a little research on power systems.

Louisiana Resident.
Again BCMP- 3.68 (engineering class bring down cum) Cum- 3.56
PS/VR/BS 11/10/10

So far I've applied to LSU NO, and LSU Shreveport. I'd like to add about 20 more schools, but I don't really have an idea where to start and I know I am already late in the game.

Any advice on which schools I should add? AMCAS is complete/verified etc.

What are my chances?

Good chances at both of your state schools. Invest in MSAR and add OOS Private schools with your median scores.
Jefferson, NYMC, Temple, VCU, Creighton are some to name a few.

OOS private schools where you could be considered for an interview with your stats would include Creighton, St. Louis, Loyola, Rosalind Franklin, Rush, Medical College Wisconsin, Oakland Beaumont, Western Michigan, Quinnipiac, Hofstra, NYMC, Albany, Drexel, Temple, Jefferson, Georgetown, GW. Tulane would also be worth applying to.
