It is good to have an idea of what each hormone does because they might throw at you a passage about hormones andddd you will not be happy. The EK bio book has a good outline of them so it is not bad to have a general sense of their function.

You DEFINITELY need to know "all the physio stuff" and hormones + functions to do well on the Biological sciences. Here's a list of everything that is fair game (aka you need to know this) for the MCAT BS section: https://www.aamc.org/students/download/85566/data/bstopics.pdf

Relevant excerpts:
A. Endocrine System: Hormones
1. Function of endocrine system (specific chemical control at cell, tissue, and organ levels)
2. Definitions of endocrine gland, hormone
3. Major endocrine glands (names, locations, products)
4. Major types of hormones

B. Endocrine System: Mechanisms of Hormone Action
1. Cellular mechanisms of hormone action
2. Transport of hormones (bloodstream)
3. Specificity of hormones (target tissue)

Like the above poster said, I think EK does a great job on the endocrine system. You pretty much need to know/understand everything in the EK bio book for a good BS score.
