I don't mean to put anyone down, but isn't a 501 too low of a MCAT for MD schools?

You could add Florida Atlantic. Your OOS schools are unrealistic. Since your chances for a MD acceptance are low (less than 20% on the GPA-MCAT grid) apply to at least 10 DO schools and your stats are competitive for the majority of DO schools. Some schools require a DO LOR. You could apply to LECOM Bradenton and NSU-COM and consider some of these schools:
ACOM
WCU-COM
LMU-DCOM
UP-KYCOM
PCOM Georgia
CUSOM
VCOM (all 3 schools)
ATSU-SOMA
WVSOM

How high does my GPA and MCAT need to be in order to be considered competitive for my IS and OOS options?

If you increase your GPA to at least 3.6 (doable) and your MCAT to 508 then you would have a 2/3 chance for a MD acceptance. Then your IS schools would be possible though all the OOS schools on your list would still be unlikely. The OOS schools on your list are mainly state public schools that favor their own residents or private schools that are very competitive.
