I'd leave the Maui project off of the experience section. (sounds too much like Spring Break and less like community service)
The Camino del Santiago project is a hook (very different and interesting)
GPA and MCAT matches well with the schools on your list.

I'd just suggest trying to get some primary care provider shadowing in before you apply.
