I am wanting to take an online course but really don't want to spend $2,000+ on something like what Kaplan or PR offers. However, I really like how these options require you to set aside a certain time on certain days every week. I'd prefer to have that structure in my course in order to keep me on pace. Does anyone have any recommendations on alternative options? I have been looking through what BenchPrep has to offer and I like that, but wanted to hear from everyone first.

I suggest you self-study. Use Berkeley Review for Physical Sciences and Biological Sciences, and Examkrackers Verbal and their 101 Passages for Verbal Reasoning. Read up on everything in the 30+ MCAT Thread, the 3-month schedule Gauss44 just linked, and create your own schedule that you can keep to.
