Have you guys ever heard of 2 ophthalmologists co-signing your LOR (because you may have more than 3 letters that you want to submit and they just combine their comments) or say a situation where you have 2 PhDs that you worked with on a project, but want to just submit ONE letter?

Hope that made sense!

anyone have experience with this?

No. But that's an interesting idea. As long as it's just one letter and they don't repeat each other or go on for pages, I think it should be fine.

I also have this exact same question: Both ophthalmologists work in the same practice and so I have been rotating with them both. Any more guidance? Already have a general medicine letter and my mentor ophthalmologist letter.
