I took one drawing course in high school at a community college to fulfill my arts credit to apply to UC's. Do I need to include this course, which did not count as college credit, on my course list in AMCAS? And request a transcript from the community college?

Yes, any coursework at any post-secondary institution needs to be listed, and needs an accompanying transcript.
