To those who have taken the MCAT...

I am (loosely) planning my schedule for the next few semesters and I was wondering what courses (besides the obvious Bio, orgo, physics... etc) should one complete before taking the exam?

Popular "extra" courses are physiology, genetics, cellular & molecular biology.

True story. And if you're a real masochist, taking physical chemistry will really drive home a lot of the concepts you'll see in the phys sciences section.
