The nonmicrobial portion of dental plaque is composed primarily of:

1. dextrans
2. food debris
3. bacterial acids
4. microbial enzymes

Answer: dextrans (December 1981 exam)

I thought the answer was food debris because it is not associated with microbes (dextrans are made by microbes, and acids and enzymes are also.) What is considered the "nonmicrobial portion"?

Sorry to dwell on this question, but I think I am still confused about this question. From passion's def, it seems that dextrans can have other functions than bacterial attachment, but in the context of the question, isn't dextran mostly related to its production from sucrose by bacteria (since bacteria produce dextrans and levans from fructose and glucose)?

Is there some reason why food debris is clearly wrong?
