What is the difference between someone who pursues a hematology/oncology residency compared to someone who just does hematology and does a fellowship in leukaemia?

The first person can get a job anywhere, including academia. The second person is stuck in academia.

In agreement here. Also speaking from someone who just took an academic leukemia position these jobs are few and far between in desirable cities. It’s a highly specialized field that’s worth pursuing if interested but the better way to do it is via hem/Onc fellowship IMO than heme with leukemia fellowship
