I am working on the EK 1001 organic chemistry, some of questions need the knowledge of the polarity and acidity of amino acids. Do we really need to memorize that for MCAT? Thanks.

I would just remember that there are polar and non-polar, and acidic side chains. The memorization of these side chains really pushes the scope of what you need to know for the MCAT and memorizing them won't guarantee you a higher score. I'd stick to more high yield topics to maximize your points.
