Does a LOI help at this point?

I interviewed a few days ago at my dream school, and I want to max out my chances of an acceptance. Does sending a LOI that says I WILL matriculate if given acceptance help chances at all at this point or do said letters just usually go unread and uncared for? Ideally I would like it to be known to the adcom before I am presented at the adcom meeting in a few weeks.

Did you convey this during your interview?

I'm curious to your LOI question too. I would guess that since it doesn't legally bind you to your dream school and theoretically you could do this with all the schools you applied to- that it wouldn't make much of a difference.

It wouldn't be different from sending a regular letter of interest. It's still too early to tell. Wait awhile, keep working on whatever extracurricular activities you've been working on, and send a combination update/interest letter later on.
