Hello!
I’m a California resident, with a dual American and Canadian citizenship. I am considering completing my undergraduate degree in Canada, and had a couple questions about admission into medical school after that.

Will I be considered an international or domestic student when applying to American med schools?
If I complete my undergraduate degree in Canada, is the coursework I complete evaluated differently?

You would be considered a domestic student because of your citizen ship and because the canadian undergraduate system is equivalent enough to the american one. I could be wrong but im fairly sure its fine and your coursework would be evaluated equally/people wouldnt necessarily look down on it
