I recently visited a med school, and met the director of admissions there. I'm wondering how should I address the director of admissions in an email just to thank this person.. Should I say "Dr...." or what?

When you refer to a judge, you might call him "Judge Brown," so I would go with "Admissions Director Stevens" :)

I'm just kidding, I think Dr. whatever would be fine. Make sure to find out if she's a doctor or not, because it'll show some effort. I doubt he or she would be offended if you called her Dr. rather than Ms., but checking seems like the nice thing to do.
