Fellowship application extra-curriculars?

In listing work/volunteer/research experience in ERAS, how much do fellowship programs care about medical school extra-curriculars? Do they care if was a mentorship captain, or if I was involved in the interviewing process, or directed a video skit for our interview video? I currently don't have this stuff listed, as it seems like "filler." What is everyone else doing?
