I'm getting ready for the January MCAT and when practicing, I find myself focused and more motivated to do Biology, Physics, and Verbal. However, I just can't get myself to do Gen Chem or Organic stuff. I suppose since I'm getting more right in the other sections, I like to do those instead. For Gen Chem/Orgo when I get a few wrong, I just get discouraged and no longer want to do the work.

Any ideas..

Think of it as a need to work on your weaknesses and turning them into strengths. That's how you maximize your MCAT score... there's no real easy way to do it; you have to find the desire to do that yourself.
 
I would skip around. There's no law that says you have to do the chapters in order. Brush up on the chemistry chapters that you like. Then as you build confidence, attack the topics that you are weak in.
